Ecuador: Day 3

Dear readers,

    We had another amazing day in Quito! This morning, we learned how to order at restaurants in Spanish including other vocabulary. Then we had a lecture by Aracely Zambrano about the uses and challenges of water in the Galapagos. It was a fascinating topic. The Galapagos islands depend 100% on rainwater which quantitively is low and leaks into the sea or evaporates. Other challenges include desalination processes, uneven water distribution to households, pollution or contamination of the water, etc.

    Afterwards, we had a discussion with Jonathan Guillemot on One Health. In short, One Health refers to integrating the health/treatment of animals, humans, and ecosystems. We delved deep into concepts of health, socialization, and other medicine-related topics. It was a very eye-opening experience and I enjoyed listening to everyone’s views and perspectives.

    After lunch, we headed towards the mountains to shop at the indoor/outdoor market. The market showcased amazing crafts, including t-shirts, art, wool sweaters, woven handbags, beaded jewelry, and much more. I enjoyed looking at all the shopkeeper’s products and bought some for my family.

                                              

    For dinner, we ate at Pizzo Tres, a pizza place a few minutes away from our hotel. They served a variety of pizzas with unique topping variations. The food was delicious, and I had a great time talking with everyone.

    I am growing more and more excited to travel to the Galapagos islands and conduct our research. I am sure everyone else feels the same. I hope you all enjoy today’s update. Please look forward to the post tomorrow!
