Day 2 in Quito

Hola! Today was our second day in Quito and we have all loved getting to explore this amazing city. Our day started with another spanish class in the morning. After, we were given a fascinating lecture about water usage, river contamination, and the accumulation of mercury in various Amazonian fish species. We even got to see samples of some of the fish taken for the third study! After, we enjoyed a nice Italian lunch on the USFQ campus, followed by a visit to the campus bakery. After, we enjoyed a lecture from Dr. Muehlenbein about OneHealth and travel medicine. We were able to see some of the research that has come out of the program in previous years. After our lectures for the day, we all got some time to explore the shops along the streets of Quito. We went to a mall and supermarket, and even got to enjoy some fresh Empanadas. Finally, we enjoyed sushi at restaurant a couple minutes away from our hotel. It was another busy yet fun and fulfilling day in Quito, and we are excited to see what’s in store for tomorrow!
